These fritters are packed with flavour and make a perfect snack or lunch/dinner base. They’re a great meal option for Meat Free Monday’s.

I enjoyed mine with a big green salad for dinner and took the leftovers for lunch.

What you will need:

1 sweet potato

2 eggs

4 tbsp of quinoa flour (or other gluten free flour)

1 ½ tsp cumin seeds

1 lemon (½ of juice of the lemon for the mixture and ½ for serving)

Small handful of parsley, chopped finely

20g of goat’s feta 

Salt and pepper to taste

Olive oil for frying

What to do:


  • Peel and grate the sweet potato
  • Squeeze the grated sweet potato in a clean tea towel to remove excess water 
  • In a large bowl combine sweet potato, eggs, flour, cumin seeds, lemon juice, parsley, feta and salt and pepper and stir thoroughly
  • Place a fry pan on low heat and add 1 tbsp olive oil
  • Add 1 large tablespoon of the mixture and cook for a few minutes each side until golden brown
  • Repeat until mixture is used, adding more oil when necessary
  • Enjoy these fritters with a squeeze of lemon juice
