These colourful cups are fresh, bursting with flavour and different textures. They’re perfect for lunch or as a side dish.

What you will need:

1 cup cubed pumpkin

Olive oil

2 capsicums

1 cup cooked quinoa

Large handful of green beans

(cut into 2cm pieces)

¼ cup goats feta

2 tbsp pine nuts

Small bunch of parsley, chopped

Salt and pepper to taste

What to do:


Preheat oven to 180°C

Place pumpkin on a lined baking tray and drizzle with olive oil

Cook in oven for 30-40 minutes or until golden brown, turning the pumpkin every so often so all sides are golden

Slice the tops off the capsicums and de-seed and place on lined baking tray

In a bowl, combine quinoa, beans, feta, pine nuts, parsley, salt and pepper

Stuff capsicums with mixture and place in oven for 15-20 mins or until capsicums are soft
