These yummy Chia puddings are a great addition to your breakfast rotation.

They can be made the night before, so in the mornings you can just grab before heading off to work, uni or school.

I like to enjoy these for breaky or a half serve for a protein packed mid-morning snack.

They will last a few days in your fridge so you can make up a few batches and have your breaky and snacks sorted for half the week.

What you will need:

1/3 cup chia seeds

1 1/3 cups coconut milk (I use Coco Quench)

1 tbsp coconut

1 tsp cinnamon

1 tsp rice malt syrup or maple syrup (optional)

What to do:


Mix well together all the ingredients and store in an airtight container in refrigerator over night

Top with your favourite fruit and enjoy!
