Most store bought pesto varieties contain cheese and garlic, which is a no-go for my tummy.
If you have never made homemade pesto now is your chance!! This recipe is super quick and easy to make but adds so much flavour to your dishes.
Add pesto to your favourite sandwiches, scrambled eggs, salads and pasta.
I like to freeze mine in an ice tray and use a cube or two when I want it.
What you will need:
2 ½ cups basil
½ cup pines nuts
3 tbsp EVOO
Juice of 1 ½ lemons
2 spring onion stalks (green part only)
Salt and pepper to taste
What to do:
MAKES 12 ICE CUBS
In a food processor or blender combine the above ingredients and blend until completely smooth
Store in an airtight container in refrigerator for a week or in the freezer.
