Nothing beats a delicious piece of banana bread with a cuppa. However, most store-bought varieties and traditional recipes are loaded with sugar, butter and white flour.
This recipe is grain-free, gluten-free, dairy-free, refined-sugar free and low FODMAP so it makes the perfect guilt-free Sarah friendly indulgence.
I love having mine slightly warm with a cup of green tea.
What you will need:
3 overripe bananas
¼ cup almond milk
2 tbsp pure maple syrup
2 tbsp coconut oil
1 tsp gluten free baking powder
1 tsp pure vanilla extract
1 tsp cinnamon
½ cup coconut flour
¼ cup chia seeds
¼ cup chopped walnuts
What to do:
APPROX 10 SLICES
Pre-heat oven to 180°C
In a large bowl mix together bananas, eggs, milk, maple syrup, coconut oil, baking powder, vanilla extract and cinnamon
Add the flour, chia seeds and nuts and mix together thoroughly
Line a bread baking tray (approx 10cm by 22cm) and pour the mixture into it
Decorate the top with desired toppings. I used shredded coconut & chopped walnuts
Place in the oven for 50-55mins, or until you place a pick stick in the middle and it comes out clean
Note: if the top is becoming too brown just cover with tin foil
