Raspberry Ripe Slice

When I first purchased myself an actual food processor, this was the first thing I made in it.

This slice is gluten, dairy and refined sugar free and has passed the taste test by “my eat anything” friends, one even saying that it could be my best recipe yet! Hope you will think the same. 

What you will need

Base

¾ cup almonds

¾ cup macadamia nuts

2 Tbsp raw cacao powder

2 Tbsp coconut oil

2 Tbsp rice malt syrup

1 Tbsp water

Filling

2 ½ cups of desiccated coconut

2 Tbsp rice malt

2 Tbsp coconut oil

¾ cup raspberries

Chocolate

¼ cup cacao

¼ cup coconut oil

¼ cup rice malt syrup

Pinch of salt

What to do

Makes 24 squares

Process all of the base ingredients until combined well and until mixture sticks between your fingers

Line a square tin with baking paper, pour mixture in and press down carefully using a spatula until the base is evenly covered (I used a 22cm by 22cm tin)

Place in the freezer for 10 mins

Process all of the filling ingredients until combined well

Pour second layer on top of base, press down carefully until evenly spread.

Place in freezer

In a saucepan, on a low heat, combine chocolate ingredients together, mixing until smooth

Pour chocolate on top until covered evenly

Place in fridge for two hours to set, cut and enjoy!
