When I was living in Brisbane my flatmate was totally obsessed with raspberries and that obsession has definitely rubbed off on me.

These brownies are actually amazing and were one of my housemates favourite recipes I made. Super moist and fudgy with a punch of raspberries. These chocolate brownies are flourless, gluten, dairy and refined sugar free.

What you need:

1 ½ cups almond meal

⅓ cup + 1tbsp raw cacao powder

1 tsp baking powder

pinch of salt

½ cup coconut oil

⅓ cup rice malt syrup

2 tsp vanilla extract

3 eggs

1 cup of raspberries (frozen or fresh)

What to do:

Preheat oven to 180° C

Mix together dry ingredients in a large mixing bowl

In a different bowl thoroughly combine wet ingredients

Mix together wet and dry ingredients until well combined

Gently stir in half of the raspberries

Pour into a lined baking tray and press in remaining raspberries

Place into the oven and bake for 25-30 minutes or until a skewer comes out clean when inserted
