Buckwheat Pancakes

Pancakes are an absolute favourite of mine and I love having them with lots of maple syrup.

What you need:

1 cup buckwheat flour

1 cup almond milk

1 tsp baking powder (gluten free)

2 eggs, separated 

1-2 tsp rice malt syrup (optional)

What to do:

Place dry ingredients in a large bowl

Mix milk, egg yolks and rice malt syrup together in a jug

Whip egg whites in a small bowl until soft peaks form

Pour milk mixture into dry ingredients and mix well

Gently fold in the beaten egg whites

Drop large tablespoons of mixture onto a pre-heated non-stick fry pan
Turn when the mixture starts to form little bubbles on the top
Allow the other side to cook for a minute or until golden brown
Remove from heat

Enjoy with pure maple syrup. S x
