Rocky Road

This fudgy goodness is actually addictive…serious self-control had to be practiced by my house mate and me as we wanted to dig into it before it had set properly (best to leave it in the fridge overnight before cutting).  

Try mixing it up with your favourite nuts and dried fruit.

What you need:

½ cup coconut oil (melted)

½ cup raw cacao powder

½ cup rice malt syrup 

2 Tbsp almond butter 

Pinch of salt

¼ cup macadamia nuts (+ a little extra)

¼ cup roasted hazelnuts (+ a little extra)

¼ cup coconut chips (+ a little extra)

¼ cup pumpkin seeds (+ a little extra)

3 Tbsp goji berries*

What to do:

In a saucepan combine coconut oil, rice malt syrup and cacao powder and stir well over a medium heat 

Mix in almond butter

Remove from heat and stir through remaining ingredients

Pour into a lined baking tray and sprinkle with extra ingredients (to make the top colourful)

Place in the refrigerator overnight (or for at least 3 hours)

Cut and enjoy! S x

* 1tbsp of gogi berries is considered to be ‘moderate’ Oligos (The Monash University Low FODMAP app) for a lower FODMAP option use dried cranberries
