When I think of jam, I think of peanut butter and jam sandwiches, which I had when I was younger (a personal favourite!).
I was lucky growing up, my mum use to make homemade jam all the time from organic plums picked from our garden (SO GOOD!). However, most store-brought varieties these days are packed with sugar and additives.
I have created a super simple, fructose friendly strawberry jam, sweetened with pure maple syrup. You could even omit the sweetener and let the natural sweetness of the strawberries shine through.
Why not try snacking on sliced banana topped with peanut butter and jam. YUM!
What you need:
1 cup strawberries
2 tbsp chia seeds
1 tbsp maple syrup (or rice malt syrup)
1-3 tbsp of water
What to do:
Combine strawberries, chia seeds and maple syrup in a food processor or blender. Add water slowly to assist in blending ingredients until you get desired consistency.
Pour mixture into saucepan on a medium heat, heat until bubbling, reduce heat and simmer for approx 5-10 minutes until the mixture thickens.
Store in an airtight jar in the fridge.
