Peanut butter overnight oats

This is my go-to recipe during the week - you can prepare it quickly the night before and grab and go in the morning. 

Peanut butter overnight oats

What you need:

1 cup gluten free oats (if following a gluten free diet)

1 cup almond milk (I use half almond milk, half water)

2 tbsp flaxseed

2 tbsp peanut butter

1 tbsp rice malt syrup (optional)

Pinch of salt 


Dollop of yoghurt (I love it with coconut yoghurt)

Extra drizzle of peanut butter

Sliced fruit (banana and raspberries are my fav with it)

What to do:

Combine oats, liquid, flaxseed, peanut butter, rice malt syrup and salt in a bowl and stir well. Cover and leave in fridge overnight, Enjoy in the morning! S x

Pumpkin Porridge

I’m always pleased when I decide to wake up that little bit early to make myself porridge before work (even when it’s cold and dark). There is nothing more comforting on a cold morning than a big bowl of nourishing porridge.

I love porridge because you can mix it up so much and create so many different expect to see lots of different variations on my blog.

What you need:

1/2 cup gluten free oats 

1/4 cup smashed pumpkin

1/2 cup coconut milk

1/2 cup water

1/2 tsp cinnamon 

1-2 tsp of rice malt syrup (depending on how sweet you like)

A pinch of all spice

A pinch of nutmeg

A pinch of salt

What to do:

In a saucepan combine all ingredients, place on medium heat and mix well.

Cook for 10 minutes or until oatmeal is soft and creamy, stirring as needed. 

Top with desired toppings - I like adding sliced banana, pumpkin seeds and pecans. DELISH!
